Sourced from smallholder family farms in the Gedeo Zone, our beans are grown at extreme altitudes of 1,700 to 2,200 meters. This thinning air and volcanic soil slow the maturation of the cherry, forcing a level of sweetness and complexity found nowhere else on Earth.
The Process: We utilize the meticulous Washed Process to highlight the region’s bright, clean flavor profile. By removing the pulp and fermenting the beans before drying on Raised Oxygenated Beds, we preserve the delicate floral aromatics that Yirgacheffe connoisseurs prize above all else.
